Tomato and Basil Bruschetta with Toasted Bread. This is one of the most popular light and refreshing Italian appetizers. It combines fresh tomatoes, aromatic basil, and garlic with olive oil and balsamic vinegar, served over crispy toasted bread slices, making it an ideal choice for parties and gatherings.
Ingredients
- Tomatoes: 6 medium (seeded and diced small)
- Basil: 2 tablespoons (fresh, finely chopped)
- Garlic: 2 cloves (minced)
- Salt: 1/2 teaspoon
- Black Pepper: 1/4 teaspoon
- Olive Oil: 3 tablespoons
- Balsamic Vinegar: 1 tablespoon
- Baguette: 1 loaf (sliced)
- Parmesan Cheese: As desired (grated, for garnish)
Instructions
- In a large bowl, combine the diced tomatoes, chopped basil, minced garlic, salt, and black pepper.
- In a small bowl, whisk together the balsamic vinegar and olive oil for about 1 minute until well combined.
- Pour the oil and vinegar mixture over the tomato mixture, then gently toss to combine.
- Let the mixture sit at room temperature for 20 minutes to allow the flavors to meld.
- Arrange the baguette slices on a baking sheet and brush them with a little olive oil.
- Toast the bread under the broiler or in a hot oven for 2 to 3 minutes until golden and crispy.
- Spoon the tomato mixture over the toasted baguette slices.
- If there’s a lot of liquid in the tomato mixture, use a slotted spoon when serving to keep the bread crisp.
- Sprinkle with grated Parmesan cheese as desired.
- Serve the bruschetta immediately while fresh.
